Ziti with Meat Sauce

Ingredients Method Notes

Ingredients
  

  • 1 28 oz Can peeled tomatoes
  • 1 Red onion chopped
  • 3 Tbsp Olive oil EVOO
  • 1 Garlic clove minced
  • 1 lb Ground sirloin or round
  • 3 Sweet Italian sausages cut into rough chunks
  • 1 Bunch Parsley chopped
  • Fresh basil chopped (to taste)
  • Salt and pepper to taste
  • 1 lb ziti pasta
  • 1 Cup Ricotta cheese for serving
  • 1/2 Cup Grated Parmesan cheese for serving

Method
 

  1. Prepare the tomatoes:
  2. Drain the tomato juice from the cans, reserving it for later if needed. Place the tomatoes in a food processor or blender and pulse until chunky. Transfer to a large pot and bring to a simmer.
  3. Sauté onions and garlic:
  4. Heat olive oil in a skillet over medium-low heat. Add chopped onion and cook until translucent, about 5–7 minutes. Add minced garlic and sauté for 1 more minute.
  5. Combine with tomatoes:
  6. Add the sautéed onions and garlic to the simmering tomato pot.
  7. Cook the meat:
  8. Brown the ground sirloin and sausage chunks in the skillet. Once cooked, transfer the meat to the tomato pot.
  9. Season and simmer:
  10. Add chopped parsley and basil. Season with salt and pepper to taste. Simmer gently for several hours (2–3 hours if possible) to allow flavors to meld. Add reserved tomato juice if the sauce becomes too thick.
  11. Cook the pasta:
  12. Cook ziti according to package directions until al dente. Drain.
Serve
  1. Spoon pasta into bowls, top with generous portions of meat sauce, a dollop of ricotta cheese, and a sprinkle of grated Parmesan.

Notes

  • For a richer sauce, you can add a splash of red wine when simmering the tomatoes.
  • If you like a smoother sauce, puree it completely before adding the meat.
  • Fresh herbs at the end brighten the flavor; avoid overcooking them.
