Creamy Mushroom & Sausage Rigatoni Bake

A hearty baked pasta dish combines savory chicken sausage with a rich and creamy mushroom sauce, all baked with rigatoni and topped with melted cheese. It's a perfect weeknight meal that's sure to please.

Ingredients Method

Ingredients
  

  • 4 cups Homemade rich cream of mushroom soup
  • 12 Small chicken sausages grilled, sliced, and sautéed with:
  • 1 Large onion thinly sliced
  • 3 cloves Garlic minced
  • 1 pound Rigatoni pasta
  • 2 Cups Shredded cheese mozzarella, cheddar, or a mix; parmesan optional for topping
  • Salt & pepper to taste
  • Optional: fresh herbs thyme, parsley, or basil

Method
 

Preheat oven
  1. 375°F (190°C)
Cook pasta
  1. Boil rigatoni in salted water for 1–2 minutes less than package instructions (it will finish cooking in the oven). Drain and set aside.
Prepare sausage mixture
  1. Heat a skillet over medium heat.
  2. Sauté the sliced onion and garlic until translucent and fragrant.
  3. Add the grilled sliced sausages and cook until slightly browned.
Combine sauce and pasta
  1. In a large mixing bowl, combine the cooked rigatoni, sausage-onion mixture, and cream of mushroom soup.
  2. Season with salt, pepper, and optional herbs.
Assemble bake
  1. Transfer mixture to a greased 9×13-inch baking dish.
  2. Sprinkle cheese evenly on top (reserve a little for a golden topping if you like).
Bake
  1. Cover with foil and bake for 20 minutes.
  2. Remove foil and bake an additional 10–15 minutes, until cheese is melted and bubbly.
  3. Optional: broil 2–3 minutes for a golden crust.
Serve hot
  1. Garnish with chopped parsley or basil for color.
