Ingredients:
- 24 oz (1.5 cups) cottage cheese (entire container)
- 3 large eggs
- 6 tbsp (1/4 cup + 2 tbsp) maple syrup or honey (adjust to taste)
- 3/4 tsp vanilla extract
- 3/4 tsp cinnamon
- 1/4 + 1/8 tsp salt
- 1 1/2 cups milk (any kind)
- 3 cups rolled oats
- 1 1/2 tsp baking powder
- 1 1/2 cups fresh or frozen blueberries
Optional Add-ins/Toppings:
- 2 tbsp chia or flax seeds
- 1/2 cup chopped nuts
- Extra berries or nut butter for topping
Instructions:
- Preheat oven to 375°F (190°C). Grease or line a 9×13-inch baking dish.
- In a large bowl, whisk together cottage cheese, eggs, sweetener, vanilla, cinnamon, salt, and milk.
- Stir in oats and baking powder. Let sit for 5 minutes.
- Gently fold in blueberries.
- Pour into the prepared dish and spread evenly.
- Bake for 40–45 minutes, or until golden on top and set in the center.
