Breakfast Bake
  • 3 Cups Cottage cheese entire container 24 oz
  • 3 Large eggs
  • 6 Tbsp 1/4 cup + 2 tbsp maple syrup or honey adjust to taste
  • 3/4 Tsp Vanilla extract
  • 3/4 Tsp Cinnamon
  • 1/4 Tbsp salt + 1/8 tsp
  • 1 1/2 Cups Milk any kind
  • 3 Cups Rolled oats
  • 1 1/2 Tsp Baking powder
  • 1 1/2 Cups Fresh or frozen blueberries
Optional Toppings
  • 2 Tbsp Chia or flax seeds
  • 1/2 Cup Chopped nuts
  • Extra berries or nut butter for topping

Equipment

  • 1 9×13-inch baking dish

Method
 

  1. Preheat oven to 375°F (190°C). Grease or line a 9×13-inch baking dish.
  2. In a large bowl, whisk together cottage cheese, eggs, sweetener, vanilla, cinnamon, salt, and milk.
  3. Stir in oats and baking powder. Let sit for 5 minutes.
  4. Gently fold in blueberries.
  5. Pour into the prepared dish and spread evenly.
  6. Bake for 40–45 minutes, or until golden on top and set in the center.
  7. Cool slightly, slice, and serve warm or chilled.
