Cuisine: American, Southwestern

Ingredients

  • 2 large ripe peaches diced
  • 1 small red bell pepper finely diced
  • 1/4 cup red onion finely diced
  • 1 jalapeño seeded and minced (leave seeds in for more heat)
  • 2 tbsp fresh lime juice
  • 1 tbsp apple cider vinegar
  • 1/2 tsp smoked paprika
  • 1/4 tsp ground cumin
  • 2 tbsp fresh cilantro chopped
  • 1/2 tsp kosher salt or to taste

Method

  1. Heat a grill or dry skillet over medium-high heat.
  2. Lightly char the peaches and red bell pepper on all sides until they develop a few dark spots but still hold their shape. Allow to cool.
  3. Dice the peaches and pepper, then place them in a medium mixing bowl.
  4. Add the red onion, jalapeño, lime juice, vinegar, smoked paprika, cumin, cilantro, and salt.
  5. Stir gently to combine without crushing the peaches.
  6. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  7. Taste and adjust salt, lime juice, or heat as desired before serving.

Notes

  • For a smokier version, add 1/8 teaspoon chipotle powder.
  • For a sweeter version closer to some batches of the Trader Joe's salsa, stir in 1 teaspoon honey.
  • Excellent with tortilla chips, grilled chicken, fish tacos, pulled pork, or as a burger topping.
