Creamy Roasted Garlic Yukon Gold Mashed Potatoes

March 9, 2024 · Major Grubbage · Leave a Comment

Description:
This rich and velvety mashed potato recipe combines the natural buttery flavor of Yukon Gold potatoes with the sweet, mellow taste of whole roasted garlic. Finished with plenty of butter and warm heavy cream, these mashed potatoes are perfectly smooth and indulgent—ideal as a comforting side for any meal.

Servings:
Serves about 10-12 people.

Ingredients:

  • 6 pounds Yukon Gold potatoes, peeled and cut into chunks
  • 1 whole head of roasted garlic (instructions below)
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups heavy cream, warmed
  • Salt and black pepper, to taste

Instructions:

Roast the Garlic:

  1. Preheat your oven to 400°F (200°C).
  2. Cut off the top of the garlic head to expose the cloves. Drizzle with olive oil, wrap in foil, and roast for 30-40 minutes, or until soft and caramelized. Let it cool, then squeeze out the roasted garlic cloves.

Prepare the Potatoes:

  1. Place the potato chunks in a large pot and cover with cold water. Add a generous pinch of salt.
  2. Bring to a boil and cook for 15-20 minutes, or until the potatoes are fork-tender. Drain well.

Mash and Combine:

  1. Return the drained potatoes to the pot or a large mixing bowl. Mash with a potato masher or ricer until smooth.
  2. Mix in the roasted garlic, softened butter, and warm heavy cream. Stir until creamy and fully incorporated.
  3. Season with salt and pepper to taste.

Serving:

Garnish with additional butter or chopped fresh herbs like parsley or chives, if desired. These mashed potatoes will be rich, velvety, and full of roasted garlic flavor!
