Roasted Garlic Hummus with Pine Nuts

Ingredients
  

  • 2 Cans Chickpeas, drained and rinsed 15 Oz
  • 2 Heads of garlic roasted
  • 1/2 Cup Tahini
  • 4 Tbsp Extra virgin olive oil
  • 4 Tbsp Lemon juice about 2 lemons
  • 1/2 Tsp Ground cumin
  • 1/4 Cup Pine nuts lightly toasted
  • Salt to taste
  • 4-8 Tsp Water as needed
  • Paprika and extra olive oil for garnish optional

Method
 

Prepare the Hummus
  1. In a food processor, combine the roasted garlic, chickpeas, tahini, lemon juice, olive oil, ground cumin, pine nuts, and a pinch of salt.
  2. Process until the mixture is smooth. If the hummus is too thick, add water a tablespoon at a time until you reach the desired consistency.
  3. Taste and adjust seasoning with more salt or lemon juice if needed.
Serve
  1. Transfer the hummus to a serving bowl.
  2. Drizzle with extra olive oil and sprinkle with paprika if desired.
  3. Garnish with additional toasted pine nuts if you like.
  4. Serve with pita bread, fresh vegetables, or your favorite dipping items.
