Grubbing Deli-Style Ham Salad

A creamy, tangy old-fashioned ham salad made from leftover spiral-cut ham, balanced with fresh Vidalia onion, homemade dill relish, and Miracle Whip for a classic deli-style flavor with a fresher homemade texture. The smoky ham, mild sweet onion, and bright pickle tang create a rich spread perfect for sandwiches, crackers, or toast.

Ingredients

  • 8 oz spiral ham finely diced
  • 1 small celery stalk finely diced
  • 1 tbsp dill relish or finely chopped dill pickles
  • 2 tbsp finely minced Vidalia onion
  • 3 tbsp Miracle Whip
  • 1/2 tsp Dijon mustard
  • 1 tsp pickle juice
  • 1/4 tsp black pepper
  • Small pinch smoked paprika
  • 1/4 tsp sugar or honey
  • Optional: tiny splash Worcestershire sauce
  • Optional: pinch celery seed

Method

  1. Finely dice the ham by hand.
  2. Mince the Vidalia onion very small so it blends smoothly.
  3. Mix all ingredients thoroughly.

Notes

Chill at least 1 hour before serving — the onion mellows and the flavor becomes noticeably better after resting.
Use King’s Hawaiian rolls or mini croissants for the best balance of sweet-savory contrast and texture control, especially if you’re serving it as sliders or party-style portions.
