Double Roasted Garlic Hummus with Pine Nuts

This creamy double roasted garlic hummus is made with canned chickpeas, tahini, lemon juice, and toasted pine nuts for a rich, nutty flavor. It’s smooth, savory, and perfect as a dip, spread, or side dish.

Ingredients:

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 heads of garlic, roasted
  • 1/2 cup tahini
  • 4 tablespoons extra virgin olive oil
  • 4 tablespoons lemon juice (about 2 lemons)
  • 1/2 teaspoon ground cumin
  • 1/4 cup pine nuts, lightly toasted
  • Salt to taste
  • 4-8 tablespoons water (as needed)
  • Paprika and extra olive oil for garnish (optional)

Instructions:

  1. Prepare the Hummus:
    • In a food processor, combine the roasted garlic, chickpeas, tahini, lemon juice, olive oil, ground cumin, pine nuts, and a pinch of salt.
    • Process until the mixture is smooth. If the hummus is too thick, add water a tablespoon at a time until you reach the desired consistency.
    • Taste and adjust seasoning with more salt or lemon juice if needed.
  2. Serve:
    • Transfer the hummus to a serving bowl.
    • Drizzle with extra olive oil and sprinkle with paprika if desired.
    • Garnish with additional toasted pine nuts if you like.
    • Serve with pita bread, fresh vegetables, or your favorite dipping items.
