This creamy double roasted garlic hummus is made with canned chickpeas, tahini, lemon juice, and toasted pine nuts for a rich, nutty flavor. It’s smooth, savory, and perfect as a dip, spread, or side dish.
Ingredients:
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 2 heads of garlic, roasted
- 1/2 cup tahini
- 4 tablespoons extra virgin olive oil
- 4 tablespoons lemon juice (about 2 lemons)
- 1/2 teaspoon ground cumin
- 1/4 cup pine nuts, lightly toasted
- Salt to taste
- 4-8 tablespoons water (as needed)
- Paprika and extra olive oil for garnish (optional)
Instructions:
- Prepare the Hummus:
- In a food processor, combine the roasted garlic, chickpeas, tahini, lemon juice, olive oil, ground cumin, pine nuts, and a pinch of salt.
- Process until the mixture is smooth. If the hummus is too thick, add water a tablespoon at a time until you reach the desired consistency.
- Taste and adjust seasoning with more salt or lemon juice if needed.
- Serve:
- Transfer the hummus to a serving bowl.
- Drizzle with extra olive oil and sprinkle with paprika if desired.
- Garnish with additional toasted pine nuts if you like.
- Serve with pita bread, fresh vegetables, or your favorite dipping items.
