Blueberry Cottage Cheese Breakfast Bake

A wholesome, high-protein breakfast bake loaded with creamy cottage cheese, fresh blueberries, and hearty oats. Naturally sweetened with maple syrup, this comforting dish is perfect for meal prep or a nutritious start to your day.

Ingredients:

  • 24 oz (1.5 cups) cottage cheese (entire container)
  • 3 large eggs
  • 6 tbsp (1/4 cup + 2 tbsp) maple syrup or honey (adjust to taste)
  • 3/4 tsp vanilla extract
  • 3/4 tsp cinnamon
  • 1/4 + 1/8 tsp salt
  • 1 1/2 cups milk (any kind)
  • 3 cups rolled oats
  • 1 1/2 tsp baking powder
  • 1 1/2 cups fresh or frozen blueberries

Optional Add-ins/Toppings:

  • 2 tbsp chia or flax seeds
  • 1/2 cup chopped nuts
  • Extra berries or nut butter for topping

Instructions:

  1. Preheat oven to 375°F (190°C). Grease or line a 9×13-inch baking dish.
  2. In a large bowl, whisk together cottage cheese, eggs, sweetener, vanilla, cinnamon, salt, and milk.
  3. Stir in oats and baking powder. Let sit for 5 minutes.
  4. Gently fold in blueberries.
  5. Pour into the prepared dish and spread evenly.
  6. Bake for 40–45 minutes, or until golden on top and set in the center.
  7. Cool slightly, slice, and serve warm or chilled.
